Avocado Sushi Boats: Paired with Koelenhof Sauvignon Blanc Vin-Sec

This delightful sparkling wine is a little sweeter than one might expect from a Sauvignon Blanc - a pleasant surprise upon that first sip!
The Koelenhof Vin-Sec pairs well with sushi, but sushi can be a complicated dish to prepare at home, so I bring you these Avocado Sushi Boats. All of the flavours, none of the complications.
HERE’S WHAT YOU NEED:
- 1 Cup Sushi rice, cooked
- 250g Salmon / TroutÂ
- 2 Tbsp Soy
- 2 Tbsp Rice vinegar
- 1 Tbsp Sriracha
- 5 Avocados
- Kewpie Mayonnaise
- Sesame seeds
- 1 Sheet Nori
- Spring onion
- Pickled ginger
HERE’S WHAT YOU’LL DO:
- Cook sushi rice according to package instructions and let cool. I like to season mine with some rice vinegar and sugar.Â
- Cut the fish into small bite sized pieces, then add the Soy, Rice vinegar and Sriracha sauce to the fish. Combine well and set aside.Â
- Cut the avocados in half, lengthwise. Remove the pit, then use a tablespoon to scoop out some of the avo, creating a little bowl.Â
- Do not discard what you’ve scooped out - use it in a salad or to make guacamole.Â
- Now add some sushi rice to the little bowl you’ve created, then top with the marinated Salmon.Â
- Finish off with a drizzle of Kewpie mayo, toasted sesame seeds, Nori (seaweed) and spring onion. Serve with pickled ginger on the side.Â
